
I’ve been in a chè mood lately and needed some of my favorite Chè Đậu Trắng, Vietnamese Black Eyed Peas Rice Pudding, in my life. This might be on my top 3 favorite chè of all time.In Vietnamese cuisine, chè refers to a variety of sweet soups and pudding-like desserts in Vietnamese cuisine. Chè Đậu Trắng is a traditional Vietnamese dessert soup made with sticky rice (glutinous rice), black-eyed peas, sugar, and rich coconut milk. I love the soft texture and taste of beans in Vietnamese desserts.
Chè Đậu Trắng can be served warm or chilled, but I love it cold!
Ingredients:4 cups cold water 2 cans black-eyed peas, drained, washed, and rinsed 1/2 cup glutinous sweet rice 1/3 cup small tapioca pearls 1 cup of sugar 1/2 teaspoon salt 1 teaspoon cornstarch, dissolved in a little bit of water
Coconut Cream Sauce Ingredients: 1 can coconut cream or coconut milk 1 3/4 cups of water 1 tablespoon cornstarch, dissolved in a little bit of water 2 teaspoons sugar 1 teaspoon salt
Steps:Prepare Black-eyed Peas - Drain and rinse canned black-eyed peas until water is clear and set aside.Prepare Tapioca Pearls - Soak the tapioca tapioca pearls in cold water for 30 minutes, then drain prior to cooking.Prepare Coconut Cream Sauce- Combine all the coconut cream sauce ingredients small saucepan. Stir over medium-low heat until the ingredients are fully combined and the sauce is warm. Turn off the heat and set it aside.Make Chè Đậu Trắng - Add glutinous sweet rice and water to a medium pot and bring it to a boil. Reduce the heat to medium-low. Stirring occasionally, simmer for 20 minutes. Fold in drained tapioca pearls, sugar, salt, and cornstarch slurry into the pot and simmer for another 10 minutes or until the tapioca pearls become translucent. Gently fold in black-eyed peas until everything is fully combined.
Serve Chè Đậu Trắng - Add a few scoops of Chè Đậu Trắng to a dessert bowl and top with a tablespoon of coconut cream sauce. Serve warm or cold, depending on your preference.
Tips:
- Cooking time may vary depending on the type of sticky rice use. Monitor and make sure its cooked through.
- Adjust the sugars to taste.
- Add more water if you want it looser.
